It’s another take on the Western meat and vegetable casserole, cooked in a specific style in Greece, Turkey, the Middle East, Hungary, Bulgaria, and other such countries. What makes Moussaka Moussaka is quite easy: an eggplant and tomato-based casserole with ground meat, spices, and usually a cheesy white sauce topping. Moussaka is made with slight variations, depending on the country serving it. Some versions, such as done in Greece, are layered with vegetable and meat components, while others, such as Turkish, are baked together in one stirred-up, sautéed mix. Some versions top the casserole off with a cheesy white sauce, while others simply use a breadcrumb-based topping. Typical spices used in any Moussaka include cinnamon, allspice, and pepper—and fresh herbs might include parsley or mint. Ground beef or lamb is the most common meat used in Moussaka, but any ground meat would work just as well—as would substituting beans for the meat in a vegetarian version.
